The blessings of nature on this land and the wisdom of farmers in maximising its potential are the cornerstones of our project.
Our creativity, knowledge, experience, hospitality and inspiration from my roots in Latin American culture blend into a great energy for a one-of-a-kind experience.
This is my challenge with Les Tonnelles.

Marco Santoscoy
Born in Guanajuato, Mexico.
Learned the basics of French cuisine in Argentina.
While working in the United States and gaining experience at restaurants in Napa Valley, Houston and Scottsdale, he encountered Japanese traditional crafts such as Japanese kitchen knives and Noh masks, and became interested in Japan.
As he deepened his understanding, he became more interested to see Japan with his own eyes, where there are many things which resonate with his sensitivity.
Fascinated by the wealth of ingredients, the beauty of nature and welcoming people, he then settled in the prefecture of Ishikawa.
He is now studying Japanese ingredients and cooking methods in greater depth in the pursuit of a new style of French cuisine that incorporates the inspiration of his own country's culture.
